Almost a year ago, one of my daughters wanted to hatch eggs for a science project. We created a homemade hatchery (see http://hudsonvalleyhandymom.com/?p=471 for more details). At the time the experiment was done, I had no idea what it would later lead to:
This is the result of the three hens I was able to keep. That’s right…THREE!!! Who would’ve thought they’d lay daily eggs? When I chose the breed of chickens, I had read that they COULD lay up to one egg a day, but I cook so much that I figured we’d go through whatever we had in a short period of time. Obviously, I overestimated myself.
When God gives you lemons, you make lemonade, right? When God gives you eggs, you scramble them, and make them even more awesome.

The recipe is relatively basic, but I have some suggested changes to bring it to an even tastier level.
First, add some water to the eggs and whisk them together to make them fluffier. I know, I know…people have been taught to use milk for scrambled eggs, but water works well and evaporates well if you accidentally add too much. I added 1/4 cup of water to the eggs in this recipe. However, you might choose to do more. The reason I added the water was because I don’t like scrambled eggs that are rubbery and hard. If you prefer a less fluffy egg, then stick with the original recipe.
If you use a non-stick pan, you can avoid the use of oil. I have a GreenPan that works so well with a dish like this: http://www.green-pan.us/us/home-1867.htm
Adding salt and pepper to the eggs (to taste) would be a great addition. The amount of chili beans in the dish weren’t really enough to really impact the dish. Either add more or eliminate them. I would even choose to cook them in the dish rather than layer them on the tortillas. Add the cheese to it prior to the eggs being cooked completely. Don’t be afraid to experiment with different cheese flavors. How about some Pepper Jack? Add some sliced jalapenos! Let your imagination fly!
Some other ideas for this dish: chop some peppers (red and green), onions, and mushrooms. Saute them in a pan with just enough olive oil to coat. Add the eggs and crumbled bacon to the pan when your vegetables are softened. Add the cheese when the eggs are almost entirely cooked. Eliminate the beans, salsa, and sour cream.
For another idea (and for a one person idea), scramble two egg whites with a little salt and pepper. Lay them on a corn tortilla. Add two slices of cooked Butterball Turkey Bacon over the top. Put approximately a tablespoon of salsa over the top and a small dollop of light sour cream.
When Meatless Monday is over, then Tuesday should be Turkey Tuesday. Actually, Monday should be Moonpie Monday or something involving chocolate since it’s the first day of the work week. Wasn’t there a song that had lyrics that said, “Just another Moonpie Monday?”
The recipe for the burritos will make a lot, so make it how you love it, and wrap them up for the early morning rush!
