Easy and Awesome Potato Soup for Your Sunday Supper!

I’ve made more potato soup in life than I care to mention.  During my twenties, it was practically a staple in my diet.  Why?  Well, for one, potatoes are relatively inexpensive.  Also, buying a ham steak at that time and making it last for a few days came in handy…especially considering the price.

My older two daughters told me they never knew how broke I was when I always managed to get dinner on the table.  But, it doesn’t take a mound of cash to satisfy your tummy!  The little things in life don’t have to consist of filet mignon.

So, on a cool, almost fall-like day, I made this recipe for our Sunday Supper.  This is a My Plate recipe too.  It’s so easy to make and so delicious!

To change this up, you could add carrots, corn, another meat, or make it vegetarian!

  1. Yum! It wasn’t until I was an adult that I realized just how thinly my father’s income was stretched when I was a kid so that my mom could stay home with us. You’re absolutely right, it doesn’t take much money to eat well when you find meals like this to make!

      So true, Nora! My older two had no idea that I was making a chicken breast last for three days either. I think it’s the greatest thing in the world that they never knew how much I stretched money out, but it’s such a great life lesson to learn how to make the most of what we have in life, isn’t it? Things like potato soup bring back some great memories in life. I think I need to make stew next! 🙂
